is it safe to just unplug this thing when i'm done or do i need to turn it off first?

Yeah, you need to turn it off first. Always turn any control to "off" before you unplug it from the wall outlet -- off first, then pull the plug.

Also, unplug it when not in use and before cleaning. Let it cool first.
