Your coffee is ground too coarsely, you're not using enough coffee, or you're tamping too lightly.

Here's how to fix it, step by step:

  1. Adjust your grinder to a slightly finer setting. The grind shouldn't be powdery, but it shouldn't be coarse either.
  2. Increase the dose of coffee in your filter basket. For the 2-cup basket, aim for 16-19g.
  3. After you tamp, use the Razor™ tool to trim the puck. If you can't insert the tool because the coffee is too low, you need more coffee.
  4. Tamp firmly, applying 15–20kg of pressure. Consistency is key.

IF THAT DIDN'T WORK: Check the freshness of your beans. Stale coffee (beans older than 20 days past their roast date) will pour too quickly and taste bitter and watery.

HEADS UP: If the espresso starts flowing in less than 6 seconds, that's a sign of under-extraction. Time your shots.
