Diagnosis
The drop in pressure on your Presto 01781 is typically caused by a "thermal equilibrium gap." When the canner first reaches pressure, the air and steam are expanding rapidly. However, once the internal temperature hits the target (usually 10-11 lbs for most recipes), the energy required to maintain that pressure increases significantly because the heat is now fighting against the thermal mass of the 23-quart volume of water and the jars themselves. If the heat source is not precisely calibrated, the temperature drops slightly, causing the steam to condense back into water, which results in a sudden drop on the gauge. Another common cause is a "slow leak" scenario. This happens when the gasket (the rubber ring) isn't seated perfectly or has developed a microscopic tear. As the pressure peaks, the force of the steam pushes against the lid; if there is a weak point in the seal, steam escapes faster than the burner can replace it. You can confirm this by listening for a faint whistling sound around the rim of the lid or looking for small plumes of steam escaping from anywhere other than the pressure regulator valve. If the gauge drops but you see no steam leaks, it is almost certainly a BTU output issue from your stove.
How to Fix It
To stabilize the pressure and prevent the gauge from dropping, follow these precise steps:
- Immediately reduce the heat from "High" to "Medium-High." Running a Presto 23-quart on maximum heat often creates turbulent boiling, which can actually push the regulator valve open too frequently, venting pressure faster than it can be built.
- Wait 3 to 5 minutes. The gauge often fluctuates as the internal temperature stabilizes. Do not make further adjustments during this window.
- Check the regulator valve. Ensure the weighted gauge is sitting flat and level on the vent pipe. If it is tilted or wobbling, it will leak pressure inconsistently.
- If the needle continues to drop, increase the heat in small increments (about 10% increases) every 2 minutes until the needle stabilizes at the required PSI.
- Verify the water level. Ensure you have exactly 2-3 inches of water in the bottom. Too much water takes too long to heat; too little water can lead to overheating and erratic pressure readings.
If That Didn't Work
- Inspect the gasket for "compression set." Remove the rubber ring and look for flat spots or cracks. If the gasket is old, it may lose its elasticity when hot, causing a seal failure only after the canner reaches temperature. Replace it with a genuine Presto replacement gasket to ensure a tight seal.
- Perform a "Soap Test" on the lid rim. While the canner is at a low pressure, lightly brush a mixture of dish soap and water around the edge of the lid. If you see bubbles forming, you have a leak that is causing the pressure drop.
- Check for "Burner Cold Spots." If you are using a large burner, ensure the flame is evenly distributing heat across the bottom of the pot. If the flame is concentrated only in the center, the edges of the pot cool down, creating a temperature imbalance that can cause the gauge to fluctuate.
- Calibrate your gauge. If the gauge is old, it may be sticking. Gently tap the glass of the gauge with your finger; if the needle jumps, the internal mechanism is worn out and the gauge needs to be replaced.

- If you are using an electric coil stove, remember that these have significant "recovery time." You must increase the heat well before the gauge starts to drop to compensate for the slow heating element.
