The flashing brew light on your Gaggia Classic Pro is not a malfunction; it is a visual indicator of the boiler's thermal cycling. The machine uses a simple bimetallic thermostat to maintain the water temperature. When you engage the brew switch, water is pushed out of the boiler and replaced by cold water from the reservoir. This sudden influx of cold water drops the boiler temperature below the set point, triggering the heating element to kick back in. The light turns off when the heating element is actively drawing power to heat the water and returns to "on" once the thermostat reaches its cutoff temperature (typically around 100°C-107°C for the brew cycle). Because the Gaggia Classic Pro has a small 3.5oz boiler, the temperature fluctuates rapidly during a 25-30 second extraction. If the light flickers or cycles off and on during a shot, it simply means the machine is fighting to keep the water hot as the cold reservoir water flows through the group head.
How to Fix It
Since this is standard operation, there is no hardware to "fix." However, the inconsistency caused by this cycling can lead to "temperature surfing" issues, where the first half of your shot is too hot and the second half is too sour. To stabilize the temperature and get a professional-grade extraction, follow this specific temperature surfing routine:
- Turn the machine on and wait for the brew light to illuminate, indicating the boiler has reached its initial temperature.
- Purge the group head by running the brew switch for 2-3 seconds without a portafilter. This clears out any stagnant, overheated water sitting in the group head.
- Wait for the brew light to turn off (meaning the heater has kicked back in to compensate for the purge).
- Wait for the brew light to turn back on. This indicates the boiler has returned to its peak temperature.
- Immediately lock in your portafilter and engage the brew switch. This ensures you start the shot at the highest possible temperature, minimizing the impact of the temperature drop during the extraction.
If That Didn't Work
If you find the temperature swings are still ruining your espresso or the light is flickering erratically regardless of water flow, consider these advanced modifications:
- Install a PID Controller: The stock bimetallic thermostat is imprecise. Replacing it with a PID (Proportional-Integral-Derivative) kit allows you to set a precise temperature (e.g., 93°C) and maintains it via a software loop, eliminating the "on/off" cycling and the flashing light issue entirely.
- Upgrade the OPV Spring: If the flashing is accompanied by very fast flow, your Over Pressure Valve (OPV) might be set too high. Replacing the 12-bar factory spring with a 9-bar spring reduces the flow rate, which slows down the introduction of cold water into the boiler and stabilizes the thermal cycle.
- Pre-heat the Portafilter: Run a "blank shot" (water only) through the portafilter before adding coffee. A cold 58mm chrome-plated brass portafilter acts as a heat sink, sucking the temperature out of the water and forcing the boiler to cycle more aggressively.
- Check the Group Gasket: If you see water leaking around the edges of the portafilter, the pressure is dropping, which can cause irregular heating cycles. Replace the group gasket with a high-temp silicone gasket to ensure a tight seal.

- Avoid leaving the brew switch "on" for extended periods without water flowing, as this can lead to overheating and potential damage to the boiler seals.
- Always use filtered water to prevent limescale buildup on the heating element; scale acts as an insulator and will make the brew light cycle more frequently and unpredictably.
- If the brew light stays off for more than 2 minutes during a shot, your heating element may be failing or your boiler is heavily scaled and requires a descaling treatment with a citric acid solution.
- Remember that the steam switch operates on a separate, higher-temperature thermostat; do not attempt to pull shots while the steam light is the only one illuminated, as you will burn your coffee.
