The burning smell and "food burn" error are caused by the localized overheating of the stainless steel base, a phenomenon known as "hot spotting." Because lentils and dal are high in starch and proteins, they thicken significantly as they cook. This increased viscosity prevents the liquid from circulating freely, creating a stagnant layer of thick paste at the bottom of the 8" diameter base. Since induction heating is incredibly rapid and concentrated, the temperature at the base-to-food interface spikes far beyond the boiling point of the liquid. The Prestige Deluxe Alpha's built-in thermal sensors detect this rapid temperature climb—which indicates that the food is scorching—and trigger the "food burn" error to prevent the stainless steel from warping or the food from carbonizing. You can confirm this is the issue if you notice a dark brown or black ring forming exactly where the induction coil meets the base of the handi, or if the error consistently triggers within 15-20 minutes of starting a high-heat cycle.
How to Fix It
To eliminate the burning error and ensure a smooth cook, follow these precise preparation and heating steps:
- Optimize the Liquid Ratio: For lentils, use a minimum ratio of 3:1 (water to lentils). If you are cooking thick dal, increase this to 4:1. The extra liquid acts as a thermal buffer, allowing the heat to distribute more evenly across the induction base.
- The Lubrication Layer: Always add 1 to 2 tablespoons of oil or ghee to the pot before adding the lentils. The fat creates a microscopic barrier between the stainless steel and the starch, reducing the likelihood of the lentils sticking to the base.
- Control the Heat Ramp: Do not start the cooker on the "High" or "Manual" setting from a cold start. Set your induction cooktop to a medium power level (approximately 800W to 1200W) until the liquid reaches a simmer. Once the pot is pressurized, lower the heat to a "Keep Warm" or low simmer setting (around 300W-500W).
- Manage Fill Volume: Ensure the lentils and water do not exceed the 2/3 maximum fill line. Overfilling prevents the necessary "headspace" for steam to circulate, which traps heat at the bottom and accelerates the burning process.
- Pre-Soak Technique: Soak your lentils for at least 30 to 60 minutes before cooking. This reduces the cooking time and the duration the food is exposed to high heat, significantly lowering the risk of triggering the overheat sensor.
If That Didn't Work
- Check for Base Debris: Inspect the bottom of the Alpha induction base for any carbonized food residue from previous cooks. Even a thin layer of burnt food can create an uneven heat distribution, causing the sensor to trip prematurely. Use a non-abrasive cleaner and a microfiber cloth to ensure the silver base is perfectly smooth.
- Verify Induction Cooktop Compatibility: Ensure the handi is centered perfectly on the induction ring. If the pot is slightly off-center, the induction coil may create an uneven magnetic field, causing one side of the base to overheat faster than the other.
- Sauté First (Tadka Method): Instead of boiling lentils in water from the start, sauté your aromatics in oil first, then add the lentils and water. This ensures the oil is thoroughly integrated into the mixture, providing a better protective layer against scorching.
- Use a Heat Diffuser: If your induction cooktop lacks a "low" setting and jumps straight to high power, place a certified induction interface disk between the cooktop and the handi to soften the heat delivery.

- Avoid Metal Utensils: Never use metal spoons to scrape the bottom of the handi while cooking lentils; this can scratch the induction-ready layer and create "anchor points" where food is more likely to stick and burn.
- Never Dry-Heat: Never place the Prestige handi on the induction hob without liquid inside. This can cause permanent warping of the base and destroy the thermal sensor's calibration.
- Cleaning Warning: Do not use steel wool or harsh scouring pads on the exterior silver base. Scratches in the induction layer can lead to inefficient heating and "hot spots" that trigger the burn error.
- Pressure Release: Always allow the pressure to release naturally for lentils. Forcing a quick release can cause the thick lentil mixture to surge upward and potentially clog the whistle or gasket.
