Diagnosis
The intense smoking is caused by rendered bacon fat dripping directly onto the upper quartz heating elements inside your Emeril oven. When hot grease hits the extremely hot elements, it instantly vaporizes and burns, creating massive amounts of smoke. This is a common issue with fatty foods like bacon in countertop ovens.
How to Fix It
Immediately stop the cook cycle and turn off the oven. Once cool, clean it thoroughly. For future bacon cooking, always use the correct rack and pan setup to catch grease:
- Place the Baking Pan (the solid metal sheet) on the bottom oven rack position.
- Place the Crisper Tray or Wire Rack on the rack position directly above the pan. This creates a gap, allowing grease to drip safely into the pan below, away from the heating elements.
- Avoid using the top rack positions for fatty foods, as this puts the food too close to the elements.
If That Didn't Work
If smoking persists with the correct setup, check that you are not overloading the crisper tray, which can cause grease to splatter. Try cooking at a slightly lower temperature (e.g., 375°F instead of 400°F) to reduce splattering. Also, inspect the heating elements for any baked-on grease deposits that weren't cleaned; these may need to be carefully wiped down when the oven is completely cold.

Never operate the oven without a drip tray in place when cooking fatty or juicy foods. Always ensure the pan and rack are securely seated on the rack guides to prevent tipping and spills.
