my instant pot ultra just says "burn" and won't pressurize, even though there's plenty of liquid in there.

DIAGNOSIS The "burn" message on the Ultra means the inner pot bottom is getting too hot, too fast. This usually happens when thick sauces, tomato-based recipes, or starchy foods are sitting directly on the hot surface before steam builds up.

FIX First, hit "cancel" to stop the cycle. Let the pot cool down a bit, then carefully open it. You'll likely find food stuck to the bottom. 1) Pour everything into a bowl. 2) Add a full cup of water or broth back into the empty inner pot. 3) Scrape the bottom clean with a wooden spoon—you need to get all the burnt bits off. 4) Return your food to the pot, give it a gentle stir to mix in some of that new liquid, and make sure nothing's stuck to the bottom. 5) Close the lid, reset to your original setting, and try again. The extra liquid should prevent the burn error.

IF THAT DIDN'T WORK Check that the silicone sealing ring is properly seated in the lid groove and is clean. A worn or misaligned ring can let too much steam escape early, causing the bottom to overheat. Also, for thick recipes, use the "pot-in-pot" method: put your food in a separate, heat-safe bowl sitting on the trivet with water underneath.

HEADS UP Never try to force the lid open when it shows "burn"—the contents are still hot and under some pressure. Always cancel and wait for the float valve to drop before opening.
