DIAGNOSIS No. The drip tray is misaligned or the grease drain channel (the 'V' in the tray) is pointed the wrong way, or the tray is warped.
FIX Ensure correct drip tray installation.
- Remove the drip tray and inspect it for warping. If bent, it may need replacement.
- Clean the tray and the area underneath thoroughly.
- On reinstallation, the tray's pointed 'V' channel MUST be facing downward, toward the front of the grill, directing grease into the removable grease bucket.
- The tray must sit perfectly flat on its supports, with the front lip tucked under the front bracket.
IF THAT DIDN'T WORK The grease management system may be overwhelmed by a very fatty cook. For long cooks like pork butt, place a disposable aluminum pan on the grates directly under the meat to catch the majority of the renderings before they hit the drip tray.
HEADS UP This pooled grease is a major flare-up risk. Never let it accumulate. Clean it after every few cooks. If the drip tray is chronically warping, you may be running the grill at excessively high temperatures (500°F+) for prolonged periods.
