This creates a structural "arch" or bridge that supports the weight of the remaining fuel above it, effectively sealing off the flow of charcoal into the firebox. Because the gravity-fed system relies entirely on the consumption of the bottom layer to pull new fuel down, once this bridge forms, the firebox is starved of oxygen and fuel, causing the temperature to plummet mid-cook. This issue is most common when using high-end, large-chunk hardwood lump charcoal, which often contains "logs" several inches long. These pieces lack the uniformity of briquettes and can easily interlock at a 45-degree angle across the chute opening. You can confirm a bridge is occurring if you notice the temperature dropping rapidly despite the hopper being full, and if you can hear a hollow "thump" when tapping the side of the hopper, indicating a gap of air between the fuel and the firebox.
How to Fix It
To resolve a bridge during a cook and prevent future occurrences, follow these precise steps:
- Immediate Clear: While the grill is hot, use a long, heavy-duty metal poker or a modified coat hanger to gently probe the hopper from the top. Do not jam the tool down violently; instead, use a stirring motion to break the tension of the arch.
- Fuel Optimization: Stop using "extra large" lump charcoal exclusively. Switch to a "restaurant grade" lump with smaller average piece sizes, or better yet, create a 50/50 blend of high-quality lump charcoal and compressed charcoal briquettes. The uniform shape of briquettes acts as a lubricant, preventing the irregular lump pieces from locking together.
- The "Sift" Method: Before loading the hopper, manually remove any pieces of charcoal that are longer than 3 inches. These "oversized" chunks are the primary culprits for bridging in the 980 model.
- Hopper Leveling: Use a bubble level to ensure the grill is perfectly level. If the grill leans slightly forward or backward, the charcoal will put uneven pressure on the chute walls, increasing the likelihood of a wedge forming.
