Diagnosis
The smoker is losing heat faster than the 800-watt heating element can produce it. The primary cause is operating in cold or windy conditions without insulation.
How to Fix It
1. Relocate the smoker out of wind and away from cold walls. 2. For ambient temperatures below 50°F, use a thermal blanket or welding blanket designed for smokers. 3. Minimize door openings. Each opening drops the internal temperature by 25-50°F.
If That Didn't Work
The door seal may be compromised. Check the gasket around the main door. If it's flattened, torn, or missing, heat is escaping. The seal is a standard self-adhesive Nomex gasket, part number 990706007 for this model.
Heads Up
Preheating is critical. Always allow 30-45 minutes for the smoker to reach your target temperature before adding food. The displayed temperature lags behind the actual cavity temperature during initial heat-up.
