The foaming you're experiencing is a common and significant issue when attempting to cook oatmeal in a standard pressure cooker. Oatmeal, along with other starchy or high-protein foods like applesauce, pasta, or split peas, releases starches and proteins that create a thick, expansive foam during the rapid boiling inside the sealed pot. Your 12-quart model, while large, operates on the same fundamental pressure and venting principles.
How to Fix It
The only safe fix is to stop using your pressure cooker for plain oatmeal. The foam can travel up and solidify inside the steam release valve (the vent on the lid), clogging it. A clogged vent cannot release excess steam, which is the primary safety mechanism preventing dangerous pressure overbuild. Instead, use your pressure cooker for tasks it excels at, like cooking beans, tough meats, or soups, and prepare oatmeal using a safer method:
- Use the pot's "Sauté" function (if equipped) to simmer oatmeal with frequent stirring.
- Cook oatmeal conventionally on your stovetop.
- Consider a dedicated multi-cooker with a specific "Oatmeal" or "Porridge" setting, which uses a lower pressure or specialized algorithm to manage foam.
If That Didn't Work
If you are determined to use the pressure function for a similar dish, you can try a heavily modified recipe designed to minimize foam. This involves using a much higher water-to-grain ratio, adding a tablespoon of oil or butter to break surface tension, and thoroughly rinsing grains like steel-cut oats before cooking. However, this alters the final texture significantly and still carries a risk. Monitoring the cook time closely and using a natural pressure release (not quick release) is mandatory.
