The production of large, soapy bubbles instead of a dense, velvety microfoam on the De'Longhi Magnifica S (ECAM22110SB) is typically a sign of "air-entrainment failure." In a healthy system, the steam is forced through a narrow aperture to create tiny bubbles that are immediately folded into the milk. When you see large bubbles, it means the steam is escaping in large pockets rather than a fine mist, or the milk proteins are failing to stabilize the air bubbles. This is most commonly caused by a partial blockage in the milk frother's internal venturi system. Dried milk proteins—which act like glue—accumulate inside the small air-intake hole of the cappuccino maker attachment. When this hole is partially clogged, the vacuum pressure is inconsistent, leading to "burping" where large gulps of air enter the stream instead of a steady flow. Alternatively, if the steam temperature is too high or the milk is pre-heated in a microwave, the proteins break down and cannot hold the air, resulting in a thin liquid topped with large, unstable bubbles. You can confirm a mechanical clog if the machine makes a loud, guttural "chugging" sound during the frothing process rather than a consistent hissing sound.
How to Fix It
To restore professional-grade microfoam, you must perform a deep chemical purge of the frothing assembly and calibrate your technique.
- **Disassemble the Frother:** Remove the cappuccino maker attachment from the steam wand. Pull the milk container away and unscrew the frothing nozzle (the plastic piece where the milk exits).

- **Temperature Calibration:** Use cold milk directly from the refrigerator (approx. 4°C/40°F). Do not pre-warm the milk.
