DIAGNOSIS You're overloading the basket. Air fryers work by circulating hot air; blocking that airflow with too much food creates steam and leads to soggy, uneven results.
FIX Cook in smaller, single-layer batches. This is non-negotiable for crispiness.
- Don't fill the basket more than halfway. Food should be in one layer with space between pieces.
- For wet items like marinated wings or fresh fries, pat them extremely dry with paper towels before adding to the basket. Surface moisture is the enemy of crisp.
